8 medium potatoes...
1 cup clarified butter...

Preheat oven to 425º...
Peel potatoes, slice thin, place all potatoes in water...
I use a mandolin to slice the potatoes, but you can use a knife, just be as uniform as posssible...
Rinse potatoes in cold water, pat dry...
In a large skillet heat a 1/4 cup of butter...
Add 1/3 of the sliced potatoes, once in skillet cook 30 seconds per side and drain well, repeat this with the other 2/3 potatoes and cook same amount of time, drain well....
In an 8 inch pie pan add 1/4 cup butter and place potatoes around the pan, overlapping just a bit...
Repeat until all potatoes are in pan overlapping each...
Take remaining butter and drizzle over all potatoes....
Bake until potatoes are done, about 30 minutes or so, test by using a toothpick, poke it into a potato and if it goes through potato without any force, it's done...
Put large plate over pie plate and turn pie plate upside down over larger plate and potatoes should fall onto the larger plate...
Serve in wedges or just take a spoon and take what you want...

Very good with grilled steaks or pork chops. I even tried it with a grilled ham slice, pretty good, I will say!
You can garnish the potatoes with some fresh cut chives over the top before serving...
