2 &1/2 cups sugar
1/2 cup water
1/2 cup light corn syrup
1/4 tsp salt
2 egg whites
1 tsp vanilla
1 cup chopped pecans

Directions:
Directions:
Cook first 4 ingredients in a heavy 2 qr saucepan over low heat
until sugar dissolves and candy thermometer reaches 248
Takes about 15 minutes Remove from heat

Beat egg whites with electric mixer until stiff peak forms
Pour half of hot syrup in a thin stream over egg whites
beating constantly on high 5 minutes

Return other half of syrup to burner and cook over medium heat until candy thermometer
reaches 272 4 to 5 minutes
Slowly pour hot mixture and vanilla over egg white mixture
Beat constantly on high until mixture holds a shape and lose
it’s gloss About 6-8 minutes
Drop quickly by tsp onto lightly buttered wax paper
