2 Tbsp. Canola Oil, divided
8 (8-oz.) Bone-in, Skin-on, Chicken Thighs
1 Red Bell Pepper, cut into 1-inch pieces
1 Green Bell Pepper, cut into 1-inch pieces
1 Lg. White Onion, cut into 1-inch pieces
1/3 cup White Rice Vinegar
1/4 cup. Ketchup
3 Tbsp. Soy Sauce
2 Tbsp. Cornstarch
2 tsp. Sugar
3 cup Cooked Rice
1/4 Scallions, sliced
1 Tbsp. Sesame Seeds, toasted

Heat 1 tablespoon of oil in large skillet over medium-high. Add chicken and cook until golden brown, 3-4 minutes per side. Place the chicken in a 4 to 5 quart slow cooker.

Heat remaining 1 tablespoon oil in skillet. Add bell peppers and onion; cook, stirring occasionally, until tender and lightly browned, about 6 minutes. Add vegetables to slow cooker.

Whisk together vinegar, ketchup, soy sauce, cornstarch, and sugar. Pour over chicken and vegetables in slow cooker. Cover and cook on Low until chicken is tender and cooked through, 3-1/2 to 4 hours. Serve chicken mixture over hot cooked rice topped with scallions and sesame seeds.
