1 medium onion
1-2 stalks celery
10-12 baby carrots or 2 whole carrots
1 cup butter
1 loaf of bread, torn into pieces
2 eggs
1 cup milk
salt and pepper to taste

Directions:
Directions:
Finely chop onion, celery and carrots; I use a food chopper
in large skillet saute the chopped vegetables until translucent.
Meanwhile beat the 2 eggs and milk together. Toss with the bread to coat. Add the sauteed vegetables and toss again.
Return the mixture to the skillet and pan fry for about 10 minutes, stirring regularly. Pour the stuffing into an 8x8 or 9x9 baking dish. Bake at 350º for approximately 30 minutes.
