Dominican Rice Recipe

1 large red onion, chopped
1 Cubanelle pepper (long bright green, sell in most grocery stores)
One chicken stock cube
3 Roma tomatoes, chopped
3 garlic, diced
1/4 cup soya sauce,
1 tbsp oregano,
3 3/4 cups of water.
Cilantro, washed and chopped (wash really well as it is usually full of dirt and it can ruin the dish!)
1 can pigeon peas, red kidney or black beans (optional)
3 cups of rice.

1. With olive oil sauté: red onion, Cubanelle pepper, chicken stock cube. Cook until onions go a bit clear but don't turn too high or they will burn.
2. Add chopped Roma tomatoes and 3 diced garlic.
3. Once it all goes into a liquid/paste, add some soya sauce, oregano, salt and pepper and 3 3/4 cups of water. Throw in cilantro. Bring to a boil. If you want to add beans, add now.
4. Once boiling, throw in 3 cups of rice. Stir and cover on low. After 30 minutes drizzle olive oil and flip the rice. Cover for another 20 minutes or so or until cooked.
