6 large baked potatoes
2 large cartons of chicken broth, sodium free
Sour cream, bacon, green onions, cheese
2 bulbs of roasted garlic (rub bulbs with olive oil, wrap in foil, slow bake at 250º until cloves are soft. Or use Lawry's Roasted Garlic salt, taste as needed.

Scoop out already baked potatoes out of skins and put in broth. Add garlic. Bring to a boil and turn down to a simmer.

Serve your portions. Add your toppings if you want fully loaded baked potato soup.

Great for those cool fall and winter nights. My husband joined our HOG Chapter in the summer several years back and when asked if he had a wife, his response was "Yes". The woman of our chapter he spoke with said he should bring me to the Chapter meeting. Then he was asked if I like to sew. His response was "She loves to quilt"! He had me come to the next meeting, 2 months after that I went on my first LOH Quilt retreat. I really didn't know anyone, but they made me feel so welcome. I have been blessed know such a wonderful group of women. This soup was a hit at the retreat and I have made it at every retreat since then. It is one of my favorites on those cold nights. You can add meat if you like. I like roasted chicken or Italian sausage at times to give it a different flair.
