Ingredients: Onions: 4 large sweet onion (Vidalia) plus 4 or 5 regular yellow onions ¼ cup butter 1 Tbsp. flour 48 oz. beef broth or consommé 1 bay leaf Salt Pepper French bread Parmesan. Gruyere, Swiss or Romano cheese

Directions:Peel and thinly slice onions into rings. In a large saucepan, sauté the onions in butter very gently over low heat, stirring constantly with a wooden spoon until they are even golden brown. (Takes roughly 2 hours).
Sprinkle flour over the onions and stir until blended. Gradually add beef broth, stirring constantly until soup begins to boil. Add the bay leaf and other seasoning, to taste. Lower the heat and simmer soup for about 20 minutes.
Serve in individual French Onion soup crocks. Top with slice of toasted French bread. Sprinkle bread with grated cheese or a combination of the cheeses. Bake in a 400-degree oven until the cheese browns (2 – 3 minutes under the broiler). |

Notes: Yield: 4 servings – Note: The number of servings depends on the amount of onions and broth used, as well as the size of the servings. [We tend to have the soup and a salad and it’s our whole meal. If you are serving the soup as a course before an entrée, you’ll probably get at least 6 servings, maybe more.]
