One Pot Lemon Herb Chicken and Rice Recipe

4 Chicken breasts
2 Tbsp butter
Salt and pepper
2 tsp Italian Seasoning

1 C uncooked brown rice
2 1/4 C chicken broth
Juice of 1 lemon
1 tsp Italian Seasoning

Directions:
Directions:
Melt butter over medium heat in a large skillet with a lid. Season chicken. Brown in butter 1-2 minutes each side (chicken shouldn't be done all the way through.)

Add rice, broth, lemon juice, and seasoning to pan. Place chicken on top, cover, and let simmer over medium-low heat 20-25 minutes, or until liquid has dissolved.
