6 cloves garlic
2 sprigs rosemary
½ cup butter
3 pounds small red potatoes
salt and freshly ground pepper to taste
2 tsp minced fresh parsley

Directions:
Directions:
Preheat oven to 400º.

Finely mince garlic and rosemary leaves (strip leaves of stem). Melt butter in small skillet over medium heat, then add rosemary and garlic. Reduce heat to low and simmer ten minutes. Cut new potatoes in quarter pieces. Put in bowl and mix with butter mixture. Roast for 35-40 min, until tender and golden brown. Arrange on large platter. Add salt and pepper. Sprinkle with parsley.
