8 eggs
4 c. milk
1¾ c. sugar (divided)
1½ t. vanilla
Cinnamon sticks (2 or 3) or cinnamon powder (sticks preferred)

Carefully caramelize ¾ c. of sugar by heating in the pan you are cooking the flan in, being sure not to overcook it to avoid bittering. Cool it in the pan.

In a separate pot, heat milk and cinnamon sticks to almost boiling. If you do not have cinnamon sticks, sprinkle a pinch or two of cinnamon into the milk as it scalds. Beat eggs and add the rest of the sugar. Next add milk (remove cinnamon sticks), little by little to the eggs. Add vanilla to mixture and then pour all into the caramel in the pan.
