1 cup white rice
½ cup Good Seasons Italian dressing*
1 Tbsp soy sauce
½ tsp sugar
2 cups fresh spinach, cut into thin strips
½ cup celery, sliced
½ cup green onions, sliced
⅓ cup crumbled bacon (optional)

Mix Good Seasons Italian dressing (not Zesty Italian) according to the package directions, but be sure to use olive oil where it calls for oil, red wine vinegar where it calls for vinegar, and instead of water use balsamic vinegar. So its red wine vinegar, balsamic vinegar, dry dressing mix, and extra virgin olive oil.
*The salad will not be the same if you do not use the above dressing.
Cook rice according to package instructions and set aside in a bowl to cool slightly. Combine dressing, soy sauce, and sugar. Stir into warm rice. Cover and chill. Fold in remaining ingredients before serving.
