¾ lb. Italian sausage, casing removed
¼ cup chopped onion
1- 16 oz. can tomatoes
1 tsp oregano leaves
½ cup shredded mozzarella cheese
½ cup grated parmesan cheese
8 oz. hot cooked fettucine noodles
3 eggs slightly beaten
2 tbsp butter
2 tbsp chopped parsley1/4 teaspoon garlic powder

Directions:
Directions:
Brown meat in 1 10-inch oven proof skillet; drain. Add onion; cook until tender. Stir in tomatoes and oregano and bring to boil, Simmer 20 minutes, stirring occasionally. Stir in mozzarella cheese. Sprinkle half of the parmesan cheese over tomato mixture. Combine remaining 1/4 cup Parmesan, eggs, butter, parsley and garlic powder, Toss with noodles and spread mixture over the tomato-meat layer. Bake at 350º for 25 minutes. Invert on serving platter. Sprinkle with additional parmesan cheese,, if desired. Cut into wedges. Makes 6 servings.

Variation: Substitute ¾ lb, ground beef and ½ tsp salt for Italian sausage.
