9 large potatoes (about 4 pounds) peeled and cubed
1 pound of carrots, cut into 1/2 inch chunks
8 green onions
1 cup sour cream
1 ½ tsp salt
¼ tsp pepper
¾ shredded cheddar cheese

Directions:
Directions:
In a soup kettle or Dutch oven, cook potatoes and carrots in boiling salted water until tender; drain. Place in a mixing bowl; mash and set aside. In a skillet saute onions in butter until tender. Add to potato mixture. Add sour cream, salt and pepper; mix until blended. Stir in 1/2 of the grated cheese. Transfer to a 9 x13 baking dish (lightly oiled), Bake at 350degrees 30 min, Top with remainder of cheese, Bake for 10-12 more minutes.
