3 pounds of chicken
cup cornstarch
1 tsp. salt
1 tsp. peper
cup oil

Sause:
2 tbsp. cornstarch
1 cup brown sugar
1-14 oz. can pineapple tidbits
⅔ cup white vinegar
1 tbsp. soy sauce
1 tbsp.caldo de pollo - yellow (bouillon)
tsp. ginger
1 large bell pepper, cut in strips (optional)

Directions:
Chicken: Mix cornstarch, salt, and pepper in a bag and shake one piece of chicken at a time coat. Fry chicken in hot oil until golden brown. Place chicken in baking dish.

Sauce: Drain ⅔ cup juice from the pineapple tidbits. Add water to make 1 liquid. Add brown sugar and chicken bouillon. Dissolve over medium heat. Add cornstarch, vinegar, soy sauce, and ginger. Mix and cook over high heat until mixture comes to a boil and thickens. Pour mixture over chicken and bake for 30 minutes at 350 uncovered. Remove from oven, add pineapple tidbits and pepper strips. Cover and bake another 30-40 minutes.
