⅓ cup orzo or other small pasta
1 lb bone in chicken pieces
3 ribs celery, diced
3 carrots, peeled and diced
½ onion, chopped fine
2 or 3 peeled tomatoes, fresh or canned
salt and pepper to taste
½ tsp dried basil
pinch or oregano
water to cover

Directions:
Directions:
Wash the chicken and place into a large pot. Add the cut vegetables to the pot, breaking up tomatoes with your fingers. Add the salt, pepper, basil, and oregano. Cover with cold water to cover (about 8 cups). Bring to a boil. Reduce heat and simmer, skimming any foam that rises to the top, until the chicken is cooked through, about 30 minutes.
Transfer the chicken to a bowl and let cool. Boil a small pot of water and cook the orzo or pasta, drain, and add to the soup. When the chicken is cool enough to handle, shred the meat and add it to the soup.
Taste the soup for salt and pepper and serve.
