Ingredients:  
3 lb of chicken breasts
2 eggs
Italian breadcrumbs
2 tbsp butter
2 tbsp of olive oil
1 onion, chopped
2 (20 oz) pkg of mushrooms, chopped
1/4 cup white wine
3 cups shredded muenster cheese
S & P
3/4 cup water

Directions:
Directions:
Cut chicken into cubes
...Marinate in raw egg and S & P mixture (can be done overnight)
Dip in breadcrumbs and brown in olive oil and butter mixture
Placed cooked chicken in 9x13 baking dish, cover, set aside
Cook onion and mushrooms in same olive oil and butter mixture until tender
Pour cooked onions and mushrooms over chicken.
Add 3/4 cup water and 1/4 cup white wine
Cover with shredded muenster cheese
Bake at 350 for 45 minutes
Serve over pasta or rice
