2 Quarts Mashed Potatoes
1 3/4 Tsp. Salt
4 Lg. Eggs-beaten
4 C. Flour

Directions:
Directions:
To Prepare Potatoes-
Boil peeled potatoes. Do NOT add salt.
When done- drain and mash until no lumps. Set aside to cool.
When cool add salt and eggs.
Add Flour until dough is stiff to hold it's shape and is not sticky.
Roll on floured board- cut and drop into boiling salt water.
Boil 25-30 minutes - test for doneness.
