2 cups cooked rice
1 egg
1/2 cup Parmesan cheese
pepper, to taste
flour, for hands
Oil for frying.

Directions:
Directions:
Mix first 4 ingredients together. Heat a small amount of oil in a frying pan. Pat hands with flour to keep the rice mixture from sticky to your hands. Use a rounded teaspoonful of mixture and form a rice cake. Pit cake into pan. Continue until pan is full. When the rice cakes are lightly browned on the bottom, turn them over and cook until the other side is browned. Do not turn them too soon or they will fall apart.
