6 medium potatoes
1/4 cup butter or margarine
1/3 chopped green onions
1/4 tsp ground white pepper
2 cups shredded Cheddar cheese
1 cup sour cream, room temperature
1 tsp salt
2 Tbsp butter

Directions:
Directions:
Boil potatoes in skins until tender. Cool then peel and coarsely shred. In a sauce pan over low heat, combine cheddar cheese and butter. Stir till melted. Remove from heat and blend in sour cream, onion, salt and pepper. Add potatoes, stirring lightly. Turn into buttered 2 quart casserole dish. Dot with butter and bake at 350 until heated through, about 25 minutes.
