1 lb left-over beef (roast or steak)
2 cups finely crush cracker or grated bread crumbs
Lemon, optional
Onion, optional
Milk or gravy
2 eggs
Butter
Salt
Pepper

Directions:
Directions:
Trim all gristle and bone from beef and hash it fine. Combine with cracker or bread crumbs, milk or gravy, eggs, lemon and onion, if desired. Season with salt and pepper. Let stand till it swells. Form into patties or balls. Brown in deep fat consisting of 1/2 butter.
