1 cup butter, softened
3/4 cup granulated sugar
3/4 cup crushed potato chips, plus additional 1/2 cup for garnish
1 teaspoon vanilla
2 cups all-purpose flour
Powdered sugar (for dusting)
1 cup chocolate chips, melted

Directions:
Directions:
Preheat oven to 350º. Lightly grease a baking sheet.

In the bowl of a stand mixer with paddle attachment, cream the butter and sugar until fluffy. Reduce speed to low, and add 3/4 cups potato chips. Mix until incorporated, then add the vanilla, and mix well. Add the flour and mix until just combined. DO NOT OVER MIX THE DOUGH!

Use a spoon to scoop small 1" balls of dough onto the baking sheet, spaced 2" apart. Dust each ball lightly with powdered sugar, and press lightly to flatten (about 1/4" thick). I use a bottom of a glass.

Bale for 10-12 minutes, or until golden brown. Allow to cool slightly. WHILE THEY ARE STILL WARM, brush or dip 1/2 of each cookie with melted chocolate and garnish with crushed potato chips. Allow to cool completely before serving.
