½ lb. ziti
2 c. milk
2 c. guyere cheese-coursely grated
1 c. parmesan cheese-finely grated
2 large eggs
3 slices white sandwich bread-diced
2 Tbs.unsalted butter, plus more for greasing
1 medium onion, diced
1 clove garlic, minced
3 Tbs. flour
pinch of cayenne pepper
salt
8 oz. thinly sliced del-boiled ham

425º oven
Bring large pot of water to a boil. Add ziti & cook until al dente (6-8 min.). Drain & place in large bowl; toss w/ ¼ c. milk.
In another bowl, combine both cheeses.
In a second bowl beat ¼ c. milk & eggs; fold in the bread & add ½ of the cheese.
Melt butter in a saucepan over high heat. Add onions & garlic. Cook stirring until just brown. 2 min. Sprinkle in flour,
cayenne & 1 tsp. kosher salt. Cook stirring about 2 min. Slowly add ¾ c. water & remaining 1½ milk; bring to a boil, stirring
until thickened.
Remove from heat & whisk to cool slightly.
Whisk in remaining cheese.
Then add pasta & toss.
Butter a shallow casserole dish. Add ½ of pasta. Top w/some of the ham & cover w/remaing pasta.
Top w/remaining ham.
Then cover w/bread mixture.
Bake until golden & bubbly. 20 min.
