Ingredients: 5-6 potatoes, washed, peeled and cut into quarters (I prefer Yukon Gold if you can get them) 6-7 slices bacon, cooked and crumbled into pieces 4 green onions, chopped 1/2 cup shredded Cheddar cheese, plus more for garnishing Salt and pepper 2 Tbsp. sour cream 3 Tbsp. butter Milk, as needed for mashed potato consistency

Directions:* Preheat oven to 350º * Put quartered potatoes into a large pot and cover with cold water. Add about 2 Tbsp. salt. * Bring the pot to a boil over medium-high heat and cook potatoes until tender. * Drain the potatoes well and leave them in the pot. * Add the butter, sour cream and about 1/3 cup of milk. * Using a potato masher or electric hand mixer, mash the potatoes until smooth and all lumps are gone. * Add more milk as necessary until you have the consistency you desire for the potatoes. * Stir in the bacon, green onions and 1/2 cup cheddar cheese. Add salt and pepper to taste. * Line a baking sheet with foil. * Using a large spoon, mound the potatoes onto the baking sheet simmer to little hills (about 1/2 cup of potatoes per hill, depending on how big you like them). * Top each hill with a sprinkle of cheddar cheese. * Place the baking sheet in the oven and bake until the hills are heated through, about 15-20 minutes. * Remove baking sheet from the oven and scoop 1-2 hills on each plate. * Serve with any type of meat or chicken and a salad. * Head for the Hills and enjoy! |
