1 1/2 lb. fresh strawberries (about 6 cups)
1/4 cup sugar

2 1/2 cups all-purpose flour
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
1/3 cup plus 1 Tbsp white sugar
2 1/2 tsp baking powder
1 tsp salt
1 cup milk

1 cup heavy cream (whipping cream)
1-2 Tbsp. white sugar

Preheat oven to 425º F.

Hull & quarter strawberries; toss in a medium bowl with sugar. Let stand until syrupy, stirring gently occasionally. They will need to sit at least 20 minutes. They can be made in advance, up to one day. Cover and refrigerate until needed.

In a food processor, combine flour, butter, 1/3 cup sugar, baking powder and salt. Process until mixture resembles coarse meal. Add milk; pulse just until moistened -- 4 or 5 times. Do not over-process.

Turn out dough onto a lightly floured surface; with floured hands, gently pat dough into a 4" x 8" rectangle.

Dust a large knife with flour; cut dough into 8 squares. Transfer to a baking sheet lined with parchment paper. Sprinkle with 1 Tbsp sugar.
Bake until golden, 25 to 30 minutes. Set aside to cool.

In a deep mixing bowl, beat 1 cup heavy cream until soft peaks form.
Sprinkle 1 to 2 Tbsp. of sugar over cream; beat until soft peaks return. Do not over-beat.
Makes about 2 cups.

TO SERVE:

Split biscuit in half, with a serrated knife; on bottom half,layer berries and whipped cream. Put other half of biscuit on top.

I made this dessert a lot in the summer when we were at Bwana House. It is simple; easy to make; and easy to make in large quantities for a crowd.
When I was in a hurry, I hate to admit it but, I used "Bisquick". Sometimes these things are necessary and it was all about the berries and whipped cream anyway.


TIP:

Cleaning berries with a mild vinegar solution helps to get rid of any hidden bacteria that can cause them to spoil too soon. Simply wash them in a bowl of 3 cups of water and 1 cup of white vinegar. Drain and rinse well, pat dry and store in a paper-towel lined container...crack the lid of the container slightly to allow moisture to escape.
