Potato Dumplings

Bottom Round Roast, or whatever roast is on sale
2 large onions,sliced
2 bottles of Mrs. Minnicks Sour Beef
1 bottle of pickling spices, tied in cheese cloth
vinegar
Ginger Snaps

Directions:
Directions:
Marinate roast in Mrs. Minnicks along with onions and pickling spices, If meat is not covered with liquid add equal parts vinegar and water until it is covered, for at least 12 hours preferably 24 hours. Remove meat from pot and cut into large chunks. Flour the meat and brown in skillet, then add back to liquid.
Bring to a boil. Reduce heat and simmer for at least 6 hours.

Remove pickling spices.

Put ginger snaps in a bowl and add hot liquid from the Sauer Beef until they dissolve. Bring the sauer beef to a boil and Slowly whisk this mixture into pot until you get the thickness you desire.
 

Potato Dumplings

8-10 medium potatoes
2 eggs slightly beaten
½ - 1 cup of flour
1-1/2 tsp salt
½ tsp. nutmeg
½ stick butter
3 slices day-old bread, cut into cubes

Directions:
Directions:
Cook potatoes in jackets, peel and put through a ricer.
Spread on a board to dry a bit.
Put into large bowl.
Add eggs, salt, nutmeg, and ½ of the flour. Mix well.

Brown bread cubes in melted butter.
Knead browned bread into potato mixture, adding flour until it holds shape without sticking to fingers.
Make balls the size of a small orange.
Drop dumplings into large pot of boiling salted water. Boil uncovered about 15 minutes or until they rise to the surface.
Remove with slotted spoon and serve with sour beef.
