3 egg whites
1 tsp cream of tartar
1 cup sugar
1 tsp vanilla
1 cup cracker crumbs, finely crushed
1 cup pecans (chopped)

Directions:
Directions:
Preheat oven to 350º. Beat egg whites until stiff. Add cream of tartar, sugar, and vanilla. Fold in cracker crumbs and pecans. Place in buttered pie pan and bake for 25-30 minutes. (The pie should be a light golden brown and set.) Cool and top with whipped cream before serving.

I have had this recipe since the 1960’s. Not sure where I got it, but probably from Mother. I have read that this is a depression-era recipe because they had to cook with what they had. I have made it many times, but not in recent years.
