1 lb. pork sausage
1 Tbsp. olive oil
1 large onion
1 tsp. garlic, minced
1/2 tsp. salt
1/2 tsp. pepper
1 can chopped green chilies
4 cans black-eyed peas
3 cans (14 1/2 oz.) beef broth
2 cans Rotel
7 slices black pepper bacon

Directions:
Directions:
Fry the sausage and drain. Set aside. Sauté together the olive oil, onion and garlic (cook until glazed). Put in crockpot. Add salt, pepper and chopped chilies to crockpot. Mix together 4 cans of black-eyed peas, drained, 3 cans of beef broth and 2 cans Rotel and add to crockpot. After simmering add bacon on top.
