1 large can chicken
1 can corn
1 can rotel and tomatoes
1 can enchilada sauce (small can)
stick of butter
1 small onion
2-3 cans of water (I use the enchilada can)
6 sliced corn tortilla
1 cup Monterrey jack cheese

Directions:
Directions:
In a big pot, melt butter and add chopped onion. Cook until onion is translucent.

Add can chicken, corn, rotel, and enchilada sauce, add 3 cans of water.

Bring to a boil, add sliced tortillas, and remove from heat. Add cheese.

Let set 10 minutes before serving.

Serve with some sliced tortillas and extra cheese in bowl if you prefer .
