After many years of trial and error, I think I have come up with a good apple pie. The secret is in the mix of apples used. Honeycrisp and Courtlands.

5 large apples using a ratio of 3 courtland / 2 honeycrisp. If you like your pie tart, if you like it more sweet swap the ratio . Peel, core and slice them in different thickness. You don't have to be precise. Squeeze some lemon juice over them as you go .
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. salt
3/4 c. white sugar
5-7 Tbls. flour, ( depends on the size of your apples )
Mix together dry ingredients then add to apples and mix together.
I use a 9 inch deep dish glass pie dish.
Put into pie shell, you can use store bought, I won't tell.
Place six or seven pats of butter ( about 3/4 of the stick) over the apples before putting on the top pie crust. Cut a couple of slits on top to vent steam.
Bake 350 Degrees anywhere from an 1 hour up 1 1/2 hour. Depends on your oven heat, mine tends to run on the cooler side and it takes 1hr 15minutes to cook.
