1 qt. of whole milk
1 tsp. Vanilla
2/3 cup of rice
1/3 cup sugar
3 egg yolks
1/4 tsp. Salt
2/3 cup whipping cream

Directions:
Directions:
1. Heat milk and vanilla. Stir in rice and return to boil.
2. Reduce heat and simmer uncovered stirring occasionally until rice is tender. Usually takes 55 minutes.
3. In a medium bowl whisk sugar, egg yolks and salt.
4. Pour in cream and whisk again until completely blended and smooth.
5. When rice is done, remove from the heat and stir in the cream mixture until well combined.
6. Return to medium and bring to boil. Remove from heat.
7. Pour pudding into dishes and cool at room temperature. Cover and refrigerate 4 hours or overnight
8. Can sprinkle with cinnamon if desired.
