1 1/2 pounds potatoes, about 6, peeled, thinly sliced
1/2 pound (8 oz.) Velveeta , cut into 1/2 " cubes
1/4 cup finely diced onions
1 teaspoon mustard
1/4 teaspoon pepper
1/4 cup milk

Butter or spray 9 x 9 pan
In sauce pan melt cheese, milk, pepper, mustard together, set aside.
Microwave diced onions in water in a glass jar 3 minutes. Drain, refil with water and repeat. When cooked a second time, remove onions from water and add to cheese mixture.
Cook potatoes in boiling water in large pot 8 to 10 minutes or until tender. Drain.
Place potatoes into baking dish.
Pour cheese sauce over potatoes and bake 30 to 40 minutes, until lightly browned.
