2 pounds peeled carrots
3/4 Cup sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla
2 Tablespoons flour
3 eggs
1/4 pound butter, softened

Directions:
Directions:
350º oven
Spray 9 x 9 pan
Steam or boil carrots until extra soft and drain well.
While carrots are warm, put carrots in mixer bowl.
Add sugar, baking powder and vanilla.
Whip in mixer until smooth.
Add flour and mix well.
In separate bowl or Bullet machine, whip eggs.
Add eggs to mixture blending well.
Add softened butter and mix well.
Pour into dish and bake 1 hour or until top is light brown.
Serve warm.
