In a 9X13 greased casserole dish:
Layer 1 - Box of seasoned croutons
Layer 2 - 1 1/2 cups grated cheddar cheese
1 cup grated Swiss cheese
1 cup grated jalapeño pepper cheese
Layer 3 - 1 lb cooked/drained sausage
( Can also use bacon or ham)

Mix together: 8 eggs (beaten), 1 1/2 cups milk
1 1/2 tsp prepared mustard, salt and pepper to taste
2 tsp minced onion

Pour egg mixture over layered mixture in casserole dish. Cover with plastic wrap and refrigerate overnight. Bake at 365º for about 1 hour and serve

Traditional Family Recipe. There are many variations of this Breakfast casserole, but I think this one from Mary Lynn is the best. If you purchase cooked sausage at the grocery store, the recipe is even easier to prepare. It is especially great for a Christmas morning brunch since you only have to pop it in the oven!
