"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 tsp Vanilla
1 1/2 cups semisweet Chocolate chips
10 large marshmallows quartered
2 cups sugar
1 can evaporated milk

Directions:
Directions:
Butter a baking dish. Put the first 5 ingredients in a large bowl. Mix evaporated milk and sugar in medium saucepan and heat to a low boil, stirring constantly.
Continue boiling and stirring for 6 minutes. Immediately pour over the chocolate ship[ mixture in the other bowl, you will be tempted to mix it right now, don't' do it yet. You want the mixture to cool to a warm bath water temperature. when it has cooled enough for you to put your finger in you may begin mixing. This way the crystals will form and your fudge will set up. Mix until the marsh mellows are melted and it starts to get thick. Pour into the bowl and refrigerate until fully set.
Cut and serve.
