1 cup four
3/4 cup oats
1 cup brown sugar
1/2 cup butter
1 tsp cinnamon
4 cups diced Red Rhubarb
1 cup sugar
2 Tbsp cornstarch
1 cup water
1 tsp vanilla

Directions:
Directions:
Combine flour, oats, brown sugar, butter and cinnamon. Mix until crumbly. Press half of mixture into a 9-inch pan. Cover with Rhubarb. In a bowl, combine sugar, and cornstarch. Add sugar mixture to a large saucepan, add water and cook over medium heat until thick and clear. Add vanilla. Pour over rhubarb. Top with remain crumbs. Bake at 350 for 1 hour. Serve with ice cream or whip cream while it's hot.

This was my Grandpa's speciality. We always had fresh Rhubarb from his garden and it makes a sweet and sour dessert that no one can resist. If you don't like rhubarb it's because you've never had Red rhubarb Crunch!
