Ingredients: 1 ½ pound lean ground beef 1 tablespoon extra virgin olive oil (once around the pan) ½ medium yellow-skinned onion, chopped 4 cloves of garlic, minced ½ bottle of beer ( alcohol burns off, or use ½ bottle non-alcoholic beer or twice the amount of broth) ½ canned no-fat, low sodium beef broth 1can (14 ounces) crushed tomatoes 2-3 tablespoons chili powder (a palmful plus half again if you like it extra spicy) 1-1½ tablespoons of ground cumin ( half as much as the chili powder) 4 good shakes of Red Hot or Tabasco sauce (liquid cayenne pepper) Kosher salt, to taste

Directions:In a deep frying pan or saucepan, brown ground beef in the olive oil over medium high heat. Add onion and garlic, cook until the onion is translucent, about 5 minutes.
Add beer, broth, tomatoes, seasonings and salt. Bring to a boil, then take heat down to low and simmer until ready to serve.
Serve with toppings:
Crushed tortilla chips Chopped raw onions Chopped fresh cilantro Shredded cheese
Serve with a side of refried beans, makes a great dip for tortilla chips too! |

Notes: This recipe is easy to double, I like to make a large batch and use the leftovers on a baked potato with all the fixings, for a quick meal!
