FILLING:

3 c. sweet potatoes, cooked and mashed
3/4 c. sugar
1/2 c. butter
2 eggs, beaten
1 t. vanilla
1/3 c. milk (evaporated can also be used)
1/2 t. cinnamon

TOPPING:

1 c. brown sugar
1/2 c. flour
1/3 c. butter, melted
1/2 c. chopped pecans

FILLING

Add sugar and butter to potatoes. Mix and add eggs, vanilla, cinnamon and milk. Mix and pour in a 9 x 12 pan. Combine topping ingredients and crumble over filling. Bake at 350 for 35 minutes till topping is slightly crunchy.

This recipe is really more a dessert than a vegetable casserole and freezes well before or after baking.
