2 or 4 whole chicken breasts, cooked and picked off the bone
1 cup uncooked minute rice
2 cups finely chopped celery
2 cans cream of chicken soup (undiluted)
1 pint mayonnaise
2 cups crushed corn flakes (measure after crushing(
4-6 tbsp of margarine, melted
salt and pepper to taste

Directions:
Boil chicken breasts in salt water until done. Use broth and add enough water to make 2 ½ cups. Boil broth; add uncooked rice and simmer covered for approximately 20 minutes or until water is absorbed, Add celery the last few minutes of simmering. Mix chicken soup and rice with mayonnaise. Mix together with chicken and pour into casserole. Sprinkle crushed corn flakes that have been mixed with melted butter, over the top. Bake 1 hour at 350º.
