1 cup cheese
1/2 cup or more veggies
4 eggs
1 cup milk
2 T flour
salt & pepper
dash of thyme - optional
9" pie crust

Directions:
Directions:
In bowl, mix: eggs, milk, flour, salt, pepper and thyme. 

In 9" pie crust or on layer of cooked brown rice in pie pan:
Spread about cheese on bottom (cheddar, swiss - whatever cheese is preferred)
Spread layer of veggies on cheese (mushrooms & onions, tomatoes & black olives, broccoli, whatever you like)
