4 medium tomatoes (about 3#)
6-8 Jalapeno peppers
2 medium chili peppers
1 large Hungarian wax pepper
2 medium to large onions
1/4 cup white vinegar
3 teaspoons salt
1 heaping teaspoon corn starch in 1/4 cup water
3-4 pint canning jars

NOTE: For milder salsa, use less peppers

Peel, coarse chop and drain the tomatoes. Set aside. Fine chop or grind all peppers, minus stems only. Peel and coarse chop onions.

Clean and sterilize jars and lids, and leave in hot water until ready to fill.

Mix all vegetables, plus vinegar and salt in a large pot. Bring to a boil, stirring occasionally. Lower heat and add cornstarch and water mixture to thicken juices. Ladle into hot jars, wiping off any spillage before sealing with lids.Turn upside down for 5 minutes. Turn right side up and continue to cool until lids 'pop' (seal). If jar does not seal, refrigerate.

Great with chips, on eggs, or many other things.
