1 1/2 c. sugar
1 Tbsp. baking powder
1 tsp. salt
1 (3-ounce) package strawberry gelatin
3/4 c. vegetable oil
4 eggs, beaten
1 (10-ounce) package sliced sweetened frozen strawberry, thawed
Directions:
Directions:
Place the flour, sugar, baking powder, salt, gelatin, oil, eggs and strawberries in a mixing bowl. Beat at medium-high speed for 2 to 3 minutes. Pour the batter into 2 greased and floured 9-inch cake pans. Bake at 350º for 30 to 40 minutes or until a toothpick inserted in the center comes out clean. Cool in the pans for 10 minutes. Remove to wire racks to cool completely. Frost the cooled cake with the Stawberry Frosting and garnish with fresh strawberries, pecan and shredded coconut.

Strawberry Frosting

1/3 c. butter, softened
3 cups powdered sugar
3 to 4 Tbsp. crushed fresh or thawed frozen strawberries

Combine the butter, powdered sugar and strawberries in a mixing bowl. Beat until the frosting is of a spreading consistency.
