Bones from rotisserie chicken or turkey.
1 or 2 onions quartered
1 head of celery chopped

Directions:
Directions:
Vitamix blender is needed.
In large stock pot, brew chicken bones from left over rotisserie chicken (or from any chicken or turkey, cooked or raw), onions, and celery.
Let it simmer until veggies are translucent.
Pull out the bones and any residual meat.
Blend the broth and the cooked veggies in a Vitamix thoroughly.

Place in quart jars and store in fridge.

This broth is not clear. It is hearty and full bodied, and adds great flavor to whatever it is served with, without adding dairy.

I sauté veggies, cook grain or pasta, and brown meat, and place in a bowl. Then I pour warmed broth over whatever I've sautéed, and add salt to taste.
