½ cup raisins, or craisins
lemon juice from ½ lemon
1 tbsp vegetable oil
salt to taste

Directions:

Place carrots and raisins together in a bowl and set aside.
Whisk lemon juice, oil, salt in a small bowl.
Add juice to carrots and combine to coat.
Adjust seasoning to taste.
