1 pkg (1 lb) baby sweet bell peppers
1 large red onion
2 fennel bulbs cut into chunks
1 Tbsp olive oil
Salt and pepper to taste
4 fresh sausages (Italian or bratwurst)
Parsley or thyme for garnish

Preheat oven to 375º; line a large rimmed baking sheet with parchment paper for easy cleanup. Core the baby peppers and remove seeds. Cut peppers in half. Cut red onion into 1 inch chunks. Cut tops off the fennel bulbs, cut bulbs in half, remove any seeds, and cut into 1 inch chunks. In a bowl, toss the vegetables with olive oil and season well with salt and pepper. Arrange in a single layer on the prepared baking sheet. Prick each sausage a few times with the tip of a paring knife, then tuck the sausages in among the vegetables. Bake for 40-45 minutes, turning vegetables and sausages once, until sausages are browned in spots and vegetables are tender. Garnish with parsley or thyme.

I found this recipe and wanted to try cooking with fennel. It has a slight sweetness, crunchy texture, and a subtle anise flavor that creates a very unique taste. I also wanted to use the yellow peppers from my garden. It really turned out well - tasty and very pretty.
