1 large yellow onion
1 head of garlic
1 thumb of ginger
2 T. garam masala
2 tsp. cayenne
6 boneless skinless chicken thighs
6 yukon golds
6 japanese sweet potatoes
3 red bell peppers
3-6 large jalapenos
salt
black pepper
1 c. water
1 T butter
2 T olive oil

Directions:
Directions:
Peel and chop onion, garlic and ginger.
Saute in butter and oil until soft.
Add salt, garam masala, red and black pepper and brown.
Add chicken (whole or quartered) and brown.
While meat browns:
Scub or peel potatoes and chop into eighths.
Chop red peppers into eighths.
Slice jalapeno (without seeds) into quarters.
Stir taters and peppers into pot add water and bring to boil.
Put lid on pot and turn flame down.
Simmer 25 min or until potatoes are soft.

My son Brendan grew up eating this curry that his daycare provider, Neelam, taught me to cook. She ran her daycare at home with her sweet father whom we all called Nanaji. He taught me to make it with red snapper. I taught my brothers and sister to make it and we have it at many of our family gatherings. It is great over rice. Enjoy!
