1 tsp. vegetable oil
1 lb. boneless chicken, cut into strips
½ c. chopped onion
¾ c. med salsa
¼ c. light peanut butter
1 c. 2% evaporated milk
Salt + Pepper

Directions:
Directions:
Heat oil over med. heat in frying pan.
Add chicken and onion, Cook and stir until chicken is browned.
Stir in salsa and peanut butter. Combine cornstarch and evaporated milk, stir into pan.
Cook and stir over medium heat until sauce boils and thickens, add Salt + Pepper to taste.
Serve over rice or noodles.

This is an easy one pan dish to make. We find it an easy meal when camping, enjoyed by all and few dishes to clean up! Try it, you might like it!!
