2 Yellow Squash, cliced thin
¼ Cup Onion thinly sliced
½ tsp. Salt
1 Egg
¼ Cup Mayonnaise
2 tsp. Sugar
Pepper to Taste
1 Cup Shredded Cheddar Cheese
1 Sleeve Crushed Ritz Crackers
¼ Cup Butter, melted

Directions:
Directions:
In saucepan put squash, onions, and salt. Cover with water. Simmer until Tender. Drain.

In small bowl, beat egg, mayonnaise, sugar pepper, and salt to taste. Stir in cheese and squash mixture. Put in greased casserole dish. Mix Butter and Ritz crackers. Sprinkle cracker mixture on top of vegetables. Bake at 350º uncovered for 25-30 minutes, or until golden brown.
