2 cups onion, chopped
2 minced garlic cloves
½ cup water
1 Tbsp ground cumin
1 Tbsp ground coriander
1 cup of your favorite salsa
2 cups chopped bell peppers, color of your choice
2 15 oz cans of black beans, drained and rinsed
1 28 oz can of diced tomatoes w liquid
11 oz bag of frozen corn
salt to taste

Cook onions and garlic in water on high heat for 5 minutes, stirring frequently. Add cumin & coriander and stir for a minute. Add salsa and bell peppers, lower head, cover and simmer for 5 more minutes with occasional stirring. Add black beans and tomatoes, simmer for 10 minutes. Add frozen corn, continue cooking for another 10 minutes. Salt to your taste.

This chili is great accompanied by my Fluffy Corn Bread and with a dollop of sour cream on top. If you like additional spicy, add a hot pepper sauce to your taste. Cilantro also goes well in this chili.
It's also great on a bed of lettuce as a chili salad.
