Ingredients:  
1 red pepper sliced
1/2 cup green onions
4 to 5 cloves of garlic, mashed
2 Asian eggplants
Firm tofu (approx. 8 ounces)
1/2 to 1 cup basil
Soya Sauce to taste ( approx. 2 to 3 tbsp)
Sambal Oelek sauce to taste (approx. 1 to 1/1/2 tsp)

Directions:
Directions:
Marinate tofu in some of the soya sauce for approx. 5 min
Saute onions, red pepper, and garlic
Fry the tofu separately in 1 tbls of oil
Add eggplants, soya, sambal oelek and basil onion, red peppers, and garlic mix
Cook until eggplants are soft. Add the tofu and soya sauce**

** add soya sauce to taste
