Cake

1/2 C butter
1/2 C shortening
1/2 tsp baking soda
pinch of baking powder
1/2 tsp salt
3/4 C coconut milk (substitute milk)
1/2 C coconut cream (substitute heavy cream)
1/2 C evaporated milk
1 C sugar
2 tbsp. rum
1 tsp vanilla
1 C cake flour

Preheat oven 350
Cake
1. In a bowl mix coconut milk, coconut cream and evaporated milk (set aside).
2. Sift flour, baking soda and salt (set aside)
3. In a large bowl cream butter oil and sugar until fluffy add eggs 1 at a time , Add vanilla.
4. Add flour and milk mixture alternating until completely incorporated.
5 Pour into a greased pan and bake until golden 20 to 30 minutes

1/2 C sweetened condensed milk
1/2 C evaporated milk

Soaking Mixture:
Poke the cake with a fork about 20 to 30 times . Using a small cup pour milk over cake slowly until all liquid is absorbed
 

Frosting


Ingredients:

1/2 C heavy cream
2 tbsp. rum
1C heavy cream
2 - 4 tbsp. honey
2 tbsp. rum
1 1/2 C of coconut flakes

Frosting:
Whip cream, honey and rum and frost cake.
Add coconut flakes to top and sides of cake and enjoy
